Hajime koto

Born in Hokkaido. Train in Alan Ducas Group, Michel Brass Toya Japon. During the French training era, he lived in the southern France, polished his skills in his hometown, Hokkaido, returned to Tokyo, and earned two stars at the age of 29, the youngest in the history of French cooks in Japan. In 2017, he established Hajime Koto, an autochules restaurant and maison brand. Having a maison brand from the world as a client, producing the entire meal, from dishes, designs, branding, and team building, according to each concept. He is also aware of the kitchen environment in Japanese restaurants, and is working hard to create an environment where chefs and other creators can maximize their power.
