Atelier KOTO is stocked with a selection of the finest kitchen equipment, with not even one off-the-shelf item. Every single piece was custom ordered by Chef Hajime Koto with the goal of creating a kitchen centered on the needs of the chef, who is ultimately the one who will use the equipment.

Fujimak played a vital role in furnishing the kitchen. With its long history as a manufacturer of commercial kitchen equipment, Fujimak is valued by many of the world’s top chefs for its wide lineup of cooking and refrigeration equipment, especially its high-performance cooking equipment.

A kitchen entirely stocked by the same manufacturer—it’s a dream come true for any chef. Given the complexity of today’s cooking processes, it helps to have access to equipment of a uniform height, size, and standard. Such a setup will undoubtedly enhance each chef’s ability to develop new recipes.

Standardized kitchen equipment may be taken for granted in other countries, but in Japan, it has often fallen by the wayside due to budgetary and construction constraints.

That’s why we want chefs to visit Atelier KOTO and experience the vast potential of our chef-centered kitchen. This is the desire driving our team at Atelier KOTO to provide total support solutions to kitchen spaces.

Members of Fujimak’s technical team, with their diverse backgrounds as chefs, nutritionists, and more, have also come on board.

Our team is focused on providing comprehensive support to the customer, which involves working closely with chefs to align our kitchen designs with the way they approach the culinary arts—both technically and emotionally—while also offering maintenance services after installation.

Atelier KOTO is a testing ground for Fujimak as much as it is for chefs. Here, chefs (the kitchen’s users) and engineers (its creators) are free to share their thoughts and opinions so they can arrive at a design that satisfies both of their sensibilities.

Fujimak was founded in 1950 and has grown into a pioneering manufacturer of comprehensive commercial kitchen solutions with bases in and beyond Japan. The company provides comprehensive support for everything from planning, proposal, and construction of kitchen equipment to after-sales maintenance. Fujimak has worked on the kitchens of so many groundbreaking establishments since its founding that it is no exaggeration to say that the history of food service is the history of Fujimak. The technical team participating in Atelier KOTO is made up of former chefs and nutritionists who are leveraging their first-hand experiences with kitchen equipment to provide technical advice.
